Bar Cleaning

Sanitation Procedures

Any establishment that serves drinks and food must comply with local health laws and follow proper sanitation procedures. Keep these essential elements in mind when creating your bar cleaning checklist.

Categories to Include in a Bar Cleaning Checklist

Instead of creating a long list, divide your to-do list into categories that need to be completed during your opening and closing shifts and throughout the day. You can also create separate to-do lists that include tasks that need to be completed weekly to ensure all spaces are thoroughly cleaned.

Bar Opening Cleaning Checklist

Clean shelves and refrigerators.

Organize shelves, refrigerators, and sinks.

Store plates.

Wipe down the bar counter and stools with sanitizer.

Set up service tables with straws, picks, bar mats, and other tools.

Cut and serve garnishes, including lemons, limes, cherries, and olives.

Bar Closing Cleaning Checklist

Dispose of empty bottles and restock the wells.

Wipe all bottles with a disinfecting cloth.

Dispose of new mixers at the end of the day.

Clean and disinfect faucets.

Clean, soak, and disinfect soda dispenser nozzles.

Clean floor drains.

Wipe and disinfect all tabletops and the bar counter.

Dispose of napkins, rags, aprons, and other clothing in the trash.

Store plates.

Disassemble service tables and place bowls, shakers, and other utensils in the dishwasher.

Wash all dirty dishes before leaving.

Refill the refrigerator with beverages that need to be refrigerated for the next shift, including spirits, wine, and beer.

Sweep and mop the floor.

Throughout the day, your staff should perform certain tasks regularly. This might include wiping down the bar with a clean cloth and sanitizer between each customer, cleaning or moving dishes to the back of the bar, and taking out the trash regularly.

By creating a detailed cleaning task list, each staff member will know exactly which tasks they are responsible for throughout their shift. Print copies of the new task lists and place them on clipboards behind the bar. This way, bartenders and other staff can verify that tasks are being completed while working, ensuring your business looks its best for your customers.
